Extaordinary Health Monster Muffins

Fiber is important for healthy digestion. The following recipe is perfect for getting some of that essential nutrient. All credit goes to the Extraordinary Health Magazine for this  Fiber-licous Recipe.

Makes about 12-18 large muffins 
  • 2 cups sprouted spelt flour
  • 1 cup ground flaxseeds
  • 1 cup pecans, chopped
  • 1 cup raisins
  • 1 cup oat bran 
  • 1 cup sucanat
  • 1 1/2 teaspoons baking powder
  • 1 1/2 teaspoons sea salt
  • 1 1/2 Tablespoons cinnamon
  • 1 cup organic whole milk 
  • 2 omega-3 eggs, beaten
  • 1 teaspoon vanilla extract
  • 3 tablespoon extra virgin coconut oil 
  • 1 cup canned pumpkin
  • 2 cup shredded carrots
  • 3 Granny Smith apples, peeled and shredded

Preheat oven to 350 degrees Fahrenheit. Grease large muffin pan with coconut oil. In a large mixing bowl, mix the flour, flaxseeds, pecans, raisins, oat bran, sucanat, baking powder, sea salt, cinnamon, whole milk, eggs and vanilla. Mix until just blended. Stir in the pumpkin, shredded carrots, and apples. Mix thoroughly. Fill each large muffin cup 2/3 full of batter. Bake at 350 degrees for 20-30 minutes or until a toothpick inserted into the center of the muffin comes out clean. Cool.
